Sandra Castro

School Wellness Coordinator

Sandra Castro has over nine years of experience with public health and wellness with a focus on childhood nutrition. She is energetic, creative, personable and passionate about breaking the chain of obesity in children and young adults.

Sandra is a School Wellness Coordinator for UnitedHealthcare’s Activate for Kids program. This philanthropic program is focused on addressing the childhood obesity epidemic through a school-based approach. The program launched nationally in six school districts in August 2011.

As the school wellness coordinator for Klein I.S.D. in Houston, Texas, Sandra facilitates coordination and engagement between key stakeholders. She partners with community organizations to provide schools with available resources and programs.

Sandra works to provide support for school nurses, teachers, and administration through program implementation, grant writing, and campus-based health initiatives. Sandra also identifies, improves, and implements school district procedures and protocols related to nutrition and fitness.

Prior to UnitedHealthcare, Sandra worked as a Staff Development Training Coordinator for the Harris County WIC Program, a nutrition program that helps pregnant women, new mothers, and young children eat well, learn about nutrition, and stay healthy. In this role, she would plan and coordinate trainings for 200 WIC staff that included an array of nutrition education topics. She also developed and implemented Obesity Prevention Mini-grant projects, trained degreed nutritionists, performed policy/procedure writing and assured quality services by spearheading administrative audits.

Prior to the staff development position, Sandra served as a nutritionist for the Harris County WIC program, to provide nutrition education and counseling, nutritious foods, and help access health care to low-income women, infants, and children. Her role encompassed data collection that included anthropometric, biochemical and dietary information to provide motivational interviewing/counseling and nutrition care plans to meet the needs of clients.

Sandra graduated with a Bachelor of Science in Food, Nutrition and Dietetics with a minor in Chemistry/Biology from Stephen F. Austin State University. She received her Masters of Science in Nutrition & Dietetics and completed her Dietetic Internship at Stephen F. Austin State University.
